Ah, thanks. And I don't really care for Chardonnay. That's why its 9 years old! So I guess reading back to your recipe, you suggest only using a wine that you would drink. So obviously that's not the one.

The only reason we kept it is that it was our first gift from our Realtor when we purchased our first home.

I have never really cooked with wine. Well, I did once to make Beef Wellingtons....YUMMO! Guess that's the next class I need to sign up for at Chez Bay...LOL

I'm glad you like it, but guess what? You might want to try another bottle of wine besides the nine year old Chardonnay. Most wine is meant to be consumed within a year or two of bottling, particularly white wines. So your Chardonnay probably won't be as good a new bottle.

Wow, this sounds great! I have a bottle of Chardonnay on my shelf that was given to me as a housewarming gift 9 years ago! I am going to have to try this. If not the chicken, definitely the herbed rice! We love brown rice but often run out of ways to prepare it...(and chicken too). Thanks for the recipe, Tesha. I will let you know how it turns out!

Great question! The peppercorns are still very spicy when you cook them whole, but they do soften. However, you can pick them out once the rice is done or don't use them at all and just add fresh ground black pepper to taste when you add the salt and herbs before fluffing.

I like to use them whole, and then just pick them out. Whole peppercorns are used a lot in Indian cooking which is what inspired me to add peppercorns to this rice dish.

Also, if you don't want to use the wine when cooking for kids, just substitute the wine for chicken broth.

Thanks for the question.

Excellent Post Tesia. I will definately have to try out this recipe. I love cooking with wine and you answered some of the questions that I have always had but didn't have anyone to ask. Anyway, I do have a question about cooking with whole peppercorn. We all know that peppercorn packs a pretty big punch when you grind it so I was wondering if boiling it whole with the rice will a.soften it and b. take away a little of the punch. Just making sure this recipe is kid friendly (or good for those who can't handle too much heat).
